Just outside the center of De Panne lies Subtiel, an atmospheric restaurant housed in a charming villa where the former living room has been transformed into an intimate and elegant dining space. Hostess Ellen Dulst, together with her trusted team from Hostellerie Le Fox, brought the same warm hospitality to this new culinary destination. The stylish interior, executed in Ellen's favorite colors, exudes both homeliness and sophistication. In the kitchen, Chef Stéphane Buyens and the team showcase a contemporary product-based cuisine in which marine classics take center stage. Dishes such as the shrimp croquette made according to grandmother's recipe or grilled turbot with Choron sauce, artichoke, tomato, and perfectly fried fries combine pure flavors and craftsmanship.
